Some months ago, we were craving a hot, tasty soup with noodles and ordered Crab Bee Hoon from a seafood franchise that has many outlets in Singapore (with each outlet claiming to be the “original” store). The soup was thin and bland, as if they just mixed milk, a lot of water and MSG together. The crab, though large, matched the soup.
Fast forward to last weekend, we tried the Crab Bee Hoon from Belly Umami, which started off as a home-based business by foodie Bernard Tan during the Circuit Breaker. With increased demand for his Crab Bee Hoon, he has started cooking and selling from the commercial kitchen of Little WOLA in Jln Kukoh (near Havelock/Chinatown).
Bern shares that his broth is made by boiling whole chickens for hours, then simmering it for more hours with dried sole fish, roasted garlic and old ginger, and finally finishing it with premium butter and Chinese wine (the alcohol evaporates).
The adults liked the Belly Umami Crab Bee Hoon and one of the kids slurped it up (the same and only kid who loves durians). There is an aftertaste of rice wine so do cater something separately for kids if they are sensitive to it. (It doesn’t have MSG so it was a tad less salty than I expected.)
Belly Umami Crab Bee Hoon is available daily for delivery, pick up or dine-in. One 600g +- crab (with accompanying noodles and broth) costs S$48 and is good for 2-3 people.
